Beef Curry Recipe

There are a many different types of curries that are made with beef including Rogan Josh, Madras, Vindaloo, Dhanask, Dopiaza and Jalfrezi. Although Beef curry is traditionally an Indian dish, as with most curries, you can find beef curry recipes in other countries. For example beef curry dishes are popular in Southern China after being introduced by Indian monks.

Stir-Fried Beef Curry Recipe

Ingredients
1 lb lean beef steaks, sliced 2-inches long x 1/4-inch thick
3 tablespoons peanut oil
8 ounces onions, sliced (1 cup)
2 tablespoons garlic, coarsely chopped
1 1/2 tablespoons spring onions, finely chopped
This beef curry recipe serves 2

Marinade
1 tablespoon light soy sauce
2 teaspoons sesame oil
1 tablespoon shaoxing rice wine or dry sherry
2 teaspoons cornstarch

Curry Sauce
1 tablespoon shaoxing rice wine or dry sherry
1 tablespoon madras curry paste or Madras curry powder
1 tablespoon dark soy sauce
1 tablespoon light soy sauce
1 teaspoon sugar
2 tablespoons chicken stock or water

Method
1. Place beef in a bowl; add all marinade ingredients and allow to marinate for 20 minutes.
2. Pre-heat wok until very hot.
3. Add the peanut oil, and heat until oil smokes a little; then stir-fry beef until lightly browned (3-5 minutes).
4. Remove from wok and drain well in a colander set inside a bowl to reserve oil.
5. Wipe the wok clean and re-heat over high heat.
6. Return 1 tablespoon of reserved oil to the wok, and stir-fry the onions and garlic for 1 minute.
7. Mix in all ingredients listed under sauce, and let mixture simmer for 3 minutes.
8. Return the beef to the wok and toss to coat thoroughly with sauce.

Indian Beef Curry

Ingredients
2 lb cubed beef or veal (small cubes)
3 Red onions, chopped
6 - 8 cloves of garlic
1 1/2 Tablespoon of grated ginger
4 - 5 curry leaves
4 green cardamoms
1 teaspoon black mustard seeds
3 green chillies, slit
2 Tablespoons of Oil
1 teaspoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/4 teaspoon freshly ground black pepper
1 1/2 Cups of coconut milk
Fried Onions and chopped fresh coriander leaves for garnishing.

Method
1. Grind the fresh garlic and ginger together and marinate the cubed meat in this for an hour.
2. Heat the oil, add the cardamom pods, mustard seeds and when they splutter, add the curry leaves, green chillies and finally the chopped onions.
3. Fry the onions until they are golden brown.
4. Add the marinated meat. Brown the meat, continuously stirring for about 10 minutes. Add salt to taste.
5. Mix all the powdered spices in a bowl and add a cup of hot water. Pour this into the frying meat and stir it in.
6. Cover the dish and cook on a simmered flame until you see the oil separate from the meat. If the meat is not tender yet, add a little more hot water, and continue to cover and cook a while longer.
7. Add the coconut milk and let it cook for 5 - 6 minutes. Do not let this boil.
8. Garnish with 1 tablespoon of fried onions and chopped coriander leaves. Serves 4 - 6 (Taken from hub-uk.com)


Thai Red Beef Curry Recipe

Ingredients
500g lean beef strips
1 tbsp thai red curry paste
1 tbsp fish sauce
300ml canned coconut milk
2 tbsp vegetable oil
1 tbsp Brown sugar
1 tsp crushed garlic
1/2 red capsicum (large mild pepper)
80g button mushrooms
80g spinach
4 tbsp chopped basil

Method
1. Mix the beef strips with oil and garlic. Heat wok on high. Stir-fry the beef strips in batches 1 minute, removing each batch when cooked.
2. Before returning beef strips to wok, add capsicum (sliced) and sliced mushrooms with a sprinkling of water. Stir for 2 minutes.
3. Return beef strips. Add curry paste, fish sauce, coconut milk, brown sugar, chopped spinach and chopped basil. Toss to heat through. Then serve with boiled rice and fresh basil leaves. This beef curry recipe serves 4. (Taken from epicurean.com)
